松島湾に大きな満月が昇る夜、思い浮かんだのは“卵”という万能食材。茶碗蒸し、オムレツ、オムライス、プリン──形を自由に変えながら、人の暮らしに寄り添う味わいです。そんな卵料理の中でも、意外と一年に一度しか食べないという声も多い「伊達巻き」。そのルーツには、伊達政宗がローマへ遣わした支倉常長が持ち帰った“ロールケーキ”があるとも言われ、卵と魚のすり身を使った和洋折衷の知恵が詰まっています。
エンヤドットエンヤドットの掛け声でおなじみ、松島を代表する民謡「大漁唄い込み」。カツオ漁などの大漁を祝う歌でした。今では珍しくなったと言われる「ナマリブシ（生利節）」で、松島のカツオをいただきました。通常のかつお節か何度か燻製を繰り返して作るのに対して、「ナマリブシ」の燻製は一度だけ。だからなのか、カツオそのままの味が、芯のあたりに残っていて絶品でした。松島ではこうしてカツオをいつでも食べられるように工夫を凝らしていました。
松島に行くと「笹かまぼこ」が売っています。かまぼこはフランスの「シャキュイットリー」に匹敵するものだと思います。ハム・ソーセージ・やテリーヌ。肉に火を入れた加工食品のことです。かまぼこもさかなに火を入れてつくっていることからいわば「ポワソン・キュイットリー」です。「笹かまぼこ」は、松島ゆかりの伊達家の家紋「竹に雀」の竹の笹にちなんで名付けられたそうです。その焼き目がつけられたかまぼこは、蒸したかまぼことは違う、見た目のおいしさも醸し出しています。
松島で、お米を使った「紅蓮」というお菓子を頂いて来ました。炭火で焼くとグネグネと生き物のように動いて、表と裏をひっくり返すとちょっと焦げ目がついて、いい香りがします。まさに手間ひまをかけて作られているからこそ味わい深いお菓子なんですが、実はこの「紅蓮」は鎌倉時代の尼さんの名前から付けられています。そこにはどんな物語があるのでしょうか？
