  • Yes!

I love how most of the stuff they talk about vindicates how I cook. Hurray for doing the dishes before you start cooking! I can’t believe other people never clean their counters and empty their sinks before starting to cook!

  • Love Chris

I love this pod and have been listening for a couple years now. The only downside is how many episodes they feature that are from other podcasts. Not enough consistency with their own new episodes.

This is now my favorite podcast. Chris is articulate and creative, I really enjoy his interviewing process. I love all the BA staff that are involved in every episode, obviously a very accomplished and intelligent group of people that keep Chris in check

BA Bake Club: One Giant Cinnamon Roll
Q: Do I need to cool the tangzhong after it's made with the butter mixed in before adding the remaining ingredients?
No, the tangzhong can be added without cooling, as the cold butter brings its temperature down to room temperature.
BA Bake Club: Olive Oil Chocolate Chip Cookie
Q: Can I make smaller cookies using the same recipe?
Yes, just reduce the baking time. However, smaller cookies might not achieve the same browning effect.
BA Bake Club: Olive Oil Chocolate Chip Cookie
Q: How do you decide whether or not to refrigerate cookie dough?
Refrigerate it to solidify the fat, which reduces spreading in the oven. Aging can help with flavors but isn't always necessary.
BA Bake Club: Olive Oil Chocolate Chip Cookie
Q: What type of olive oil should I use?
Avoid high-end finishing oils that are strong and grassy. Use a middle-of-the-road brand that's good for everyday cooking.
