  • Gratitude 🙏

Gratitude is the first word that comes to my mind when I think of the opportunity that was presented to me from Carl of the Walk-In Podcast. Carl captured the true essence of my mission; to serve up faith, family and Italian food in my community of Tampa. I felt comfortable to share some very raw emotions when it comes to my mental health, the ups and downs of entrepreneurship and the ability to pivot and never lose sight of your dreams. Grateful for this podcast.. Grateful for Carl.

Chef Michael Collantes on Earning and Keeping a Michelin Star in Orlando, FL
Q: Is the restaurant game more about the accolades or shaping future generations of chefs?
Ten years ago, I would have said Michelin star was more important, but now I find shaping future generations to be more fulfilling.
Chef Michael Collantes on Earning and Keeping a Michelin Star in Orlando, FL
Q: How do you deal with leadership as your restaurant count increases and you need to trust others?
I'm still trying to deal with it, but being a good leader requires a different skill set than being a great chef.
Chef Michael Collantes on Earning and Keeping a Michelin Star in Orlando, FL
Q: When you talk about opening all these restaurants and doing consulting, looking back, would stepping away from these different paths teach you about the leader and chef who you are today?
The past couple of years have been interesting, opening up more restaurants and doing consulting. I just wanted to see what else was out there.
James Beard, Michelin, and the Soul of King Cake

Belonging is the feeling of existing fully without pretense, and being in a company that embraces who I am.
